5 eating apples
1tbsp soft brown sugar
25g butter
½tsp ground cinnamon
pinch of cloves and ground ginger
½ lemon, just the juice
25g sultanas, optional
500g puff pastry
plain flour
milk and caster sugar
First peel, core and slice the apples, place in a medium sized pan with the sugar, butter, spices, lemon juice and 1tbsp water. Bring to the boil, then reduce the heat to a simmer and cover the pan with a lid. Cook for 15-20min or until the apples are soft but still hold their shape, stir in the sultanas (if using) and set aside to cool.
Using a rolling pin, roll the puff pastry out on a lightly worksurface to about the thickness of a £1 coin.
Using a knife cut out 8 x 12cm squares.- you may need to gather the leftover pastry pieces up and re roll them. Place the cooked apple in a corner of each square, then fold over the pastry corner to corner to make a triangle. Press down the edges to seal and place on a baking sheet lined with baking paper. Brush with milk or water and sprinkle with a little sugar. Bake at 190°C for 15-20min or until golden and puffed up.
Serve with vanilla icecream and caramel sauce
