Makes: 30 biscuits
Ingredients:
Vanilla biscuits
100g butter, softened
½tsp vanilla extract
50g caster sugar
150g plain flour
Chocolate biscuits
100g butter, softened
50g caster sugar
125g plain flour
25g cocoa powder
To decorate a small amount of glace icing and smarties
For the vanilla biscuits place the butter, vanilla extract and sugar in a bowl.
Beat with a wooden spoon until soft and combined.
Sift over the flour and stir together until the mixture is well combined and comes together in a ball.
Then shape into a long rectangle bar ( I patted and pushed mine into shape ) about 15cm long and 6cm wide.
Wrap in cling film and chill for 30min.
For the chocolate biscuits, repeat as above, sifting the cocoa with the flour. If your mixture is a little stiff add a splash of milk.
Then using a large knife, cut each bar lengthways equally into three slices, then cut each slice equally into three.
You will land up with nine x 2cm wide and 15cm long slices.
Arrange three slices alternately, vanilla, chocolate, vanilla, then the opposite way chocolate, vanilla, chocolate.
Stack them onto of each other until there are three alternate layers or 9 slices.
Press together then wrap in cling film and chill. Repeat with remaining slices.
Using a sharp knife cut each log into 1cm slices and place cut side up on baking sheets lined with baking paper.
Cook at 180°C for 10-15min or until golden.
Leave to cool then decorate with smarties held in place with a small blob of icing.
