CHOCOLATE FUDGE PUDDING

This has been a family favourite since my children were tiny.


Ingredients:

75g self raising flour

2 level tbsp cocoa powder

125g butter

125g caster sugar

2 eggs

½tsp vanilla essence

1-2tbsp milk

for the sauce

125g soft brown sugar

75g dark chocolate

300ml hot water


  • Sift the flour, cocoa powder and set aside.

  • Place the butter and sugar in a bowl and whisk together until pale and fluffy.

  • Add the eggs one at at time, whisking well between.

  • Stir in the vanilla essence and then gently stir in the sifted flour.

  • Spoon the mixture into a 1 litre oven proof dish. In a heatproof jug combine the sugar, chocolate and boiling water and stir until the chocolate has completely melted.

  • Then pour over the cake mixture.

  • Cook at 190°C for 30-40min or until the cake has risen to the top and the sauce underneath.

  • Serve with cream or ice cream.
