These are so moreish I ate the first batch before I had time to photograph them, they are a cross between an energy ball and rocky road and all the better for it!
Ingredients
100g milk chocolate
50g butter
100g digestive biscuits
50g each or to your liking raisins, desiccated coconut and chopped dried apricots
golden syrup, optional
icing sugar and or cocoa powder for rolling
Place the chocolate and butter in a small bowl over a pan of simmering water and stir gently until melted and smooth, set aside.
Place the biscuits in a bag or bowl and squash gently with a rolling pin until the biscuits resemble breadcrumbs. Pour the crushed biscuits onto the chocolate mixture and stir to combine adding the raisin, coconut and apricots.
Leave to cool then shape small spoonfuls of the mixture into round balls. If they are not sticking together or holding their shape add a little golden syrup to the mixture and try again. Roll in icing sugar or cocoa powder. Chill for 1 hour before serving.
