SALMON FILLETS WITH A HERB CRUST

Serves: 4

Ingredients:

4x 150g salmon fillets, skinned

salt and freshly ground black pepper

125g cream cheese

1 garlic clove , crushed

½ lemon,

25g fresh white breadcrumbs

25g grated parmesan cheese

2 tbsp chopped parsley

½tsp smoked paprika

1tbsp sunflower oil


  • Place the salmon fillets in a roasting tin and season well.

  • Place the cream cheese in a bowl, add the garlic, salt and pepper and lemon rind and stir well.

  • Spread even amounts of the cheese mixture over the top of each salmon fillet.

  • Combine the breadcrumbs, parmesan and parsley in a small bowl and season.

  • Sprinkle on top of the cream cheese mixture and dust with the smoked paprika.

  • Drizzle over the oil and then cook at 200C for about 15 minutes.

  • To tell when the salmon is done, it will have changed from translucent to an opaque pink.

  • Serve immediately with boiled new potatoes.
